FRUIT COMPOTE[/x_custom_headline][cs_text class=”man” style=”font-size: .95em;”]Sunday brunch dates in New York City are a favorite amongst friends, but sometimes it’s just as fun to prepare the most important meal of the day at home. Last week, I did just that, using my love of exotic fruits to create a divine brunch dish that rivals any restaurants…..if I do say so myself. The best part about it? 1/2 cup sugar
1 teaspoon finely grated lemon zest
1/2 cup lemon juice
1/2 cup DIABOLO Dragon Fruit Plum
1 cup fresh strawberries, halved, quartered
2 cups fresh or frozen blueberries
1 teaspoon of vanilla extract[/cs_text][/cs_column][cs_column fade=”false” fade_animation=”in” fade_animation_offset=”45px” fade_duration=”750″ type=”2/3″ style=”padding: 0px;”][cs_text class=”man” style=”font-size: .95em;”]PREPARATION
In a bowl, combine sugar and lemon zest. Use your fingers to rub the zest and sugar to release lemon oils.
Add remaining ingredients to the bowl, and let sit for about 30 minutes to allow the lemon acids to break down the fruit. You can use any combination of berries for the compote.
Add to a saucepan. Cook, stirring frequently over medium-high heat until the mixture is boiling, about 3 minutes. Reduce to low and simmer for about 10 minutes, allowing the berries to break down.
Remove from heat and allow mixture to cool and congeal.
